VEGETABLE CURRY
Description
Curry is one of my favorite foods to enjoy! It is so warm, comforting and nourishing. All the spices warms me to the core. I have created a very simple, easy curry recipe to share with you all. You can add animal protein to it if that is your thing too!
Ingredients
- 1 tsp coconut oil
- 1 small onion chopped
- 3 cloves of garlic choppped
- 1 tsp salt
- 1 tsp pepper
- 1 tsp ginger
- 1 small sweet potato chopped
- 1 cup broccoli
- 1 cup cauliflower
- 1/2 cup carrots
- 1/4 cup lima beans (or chic peas)
- 1/2 cup red lentils
- 1 large red pepper
- 1 can full fat coconut milk
- 2 cups vegetable broth
- 1/2 jar Mekhal yellow curry paste
Instructions
You can also use any vegetables you want, I use whatever I have on hand
- In a large pot, add coconut oil, onion, garlic, mix together over medium heat for 2-3 min
- Add in all the vegetables, mix well and allow to cook together for another 2-3 min
- Add coconut milk, broth, curry paste, salt and pepper, mix together
- Bring to a boil and then down to a simmer, cover and allow to cook for 20-25 min
- Serve over rice
