Vegan + GF

  • 23 ripe bananas mashed
  • 1 Flax egg
  • 3/4 cup nut milk
  • 1/4 cup coconut oil (melted)
  • 1/2 cup almond butter (or any nut butter)
  • 1 teaspoon vanilla extract
  • 1/2 cup coconut flour
  • 1 cup almond flour
  • 1 teaspoon baking powder
  • 2 tsp Cinnamon
  • 1/2 cacao nibs
  • 1/4 cup walnuts


  1. Preheat oven to 350 degrees and grease the pan dish with oil or line with parchment paper
  2. Make flax egg (mix one tablespoon ground flaxseed meal with three tablespoons of water. Mix together, and let sit in your fridge for 15 minutes to set up and thicken)
  3. In a large bowl, mix together mashed bananas, nut butter, flax egg, nut milk, coconut oil, and vanilla extract
  4. Mix well then add in almond flour, coconut flour, cinnamon and baking powder
  5. Fold in cacao nibs then pour into bread dish
  6. Sprinkle chopped walnuts on top
  7. Bake in oven for about 45 minutes, cool before slicing and enjoy!!
