Lentil Soup

This gem is Vegan + Gluten free!

  • 3 tbsp avocado or coconut oil
  • 3 large carrots, chopped
  • 3 large celery stalks, chopped
  • ½ a sweet onion, chopped
  • 1 tbsp garlic, chopped
  • 4 ½ cups vegetable broth (or any kind of broth)
  • 1 tbsp dried thyme
  • 1 cup lentils (make sure to rinse them before)
  • ½ a lemon
  • 1 tbsp parsley


In a large pot,  oil over medium heat, add carrots, celery and onion. Let that simmer for 5 minutes. Add  garlic, stir for a moment and then add vegetable broth dried thyme. Finally add red lentils. Bring to a boil, once boiling reduce to a simmer for 15 min or until lentils are cooked. Finish with squeezing a whole lemon into the soup, add some zest and top with parsley. Enjoy!
