SUMMER SALAD

Ingredients

  • 2-3 cups mixed greens
  • 1 large cucumber chopped
  • 1 large raw beet chopped
  • Handful of walnuts
  • Vegan cashew cheese
  • ½ an avocado
  • ⅓ cup of blueberries
  • 1-2 tbsp of hemp seeds

Dressing:

  • 1 tbsp EVOO
  • Juice from a small lemon
  • Salt + Pepper

Instructions

Mix everything in a large bowl and enjoy 🙂
