OOEY GOOEY CINNAMON WALNUT BANANA BREAD

Ingredients
Vegan + GF
- 2–3 ripe bananas mashed
- 1 Flax egg
- 3/4 cup nut milk
- 1/4 cup coconut oil (melted)
- 1/2 cup almond butter (or any nut butter)
- 1 teaspoon vanilla extract
- 1/2 cup coconut flour
- 1 cup almond flour
- 1 teaspoon baking powder
- 2 tsp Cinnamon
- 1/2 cacao nibs
- 1/4 cup walnuts
Instructions
- Preheat oven to 350 degrees and grease the pan dish with oil or line with parchment paper
- Make flax egg (mix one tablespoon ground flaxseed meal with three tablespoons of water. Mix together, and let sit in your fridge for 15 minutes to set up and thicken)
- In a large bowl, mix together mashed bananas, nut butter, flax egg, nut milk, coconut oil, and vanilla extract
- Mix well then add in almond flour, coconut flour, cinnamon and baking powder
- Fold in cacao nibs then pour into bread dish
- Sprinkle chopped walnuts on top
- Bake in oven for about 45 minutes, cool before slicing and enjoy!!
